Because they were invented HERE? In New York, to be precise. A frustrated chef, "cooperating" with Cornelius Vanderbilt(?), who kept complaining that his English-Style-Chips were not thin enough. So finally the chef sliced them EXTREMELY THIN, cooked them to a CRISP and invented the potato chip. 'Nough said?
The story as featured on a web site devoted to culinary trivia. It was indeed Commodore Cornelius Vanderbilt (and chef George Crum, who were both having a bad day. Vanderbilt sent his plate back twice(!) complaining his chips were soggy and insuficiently thin, so with malice in his heart Chef Crum sliced them t h i n like potato CHIPS are today and fried them to a fair-thee-well and salted them enormously, so if he sent them back again it would be a truly atrocious dish.
Vanderbilt loved them. Saratoga-style chips were a regional specialty for years.
